Orange-olive Spinach Salad with Red Onion

While flipping through channels on the TV the other day, a brief stop on the Food Network gave me a glimpse of a salad like the one I’ve created here. I’ve no idea whose show I saw it on or if there’s even a recipe around somewhere, but I knew I just had to try the orange-olive-red onion combination.

My man, normally a devoted salad hater, loved this. Ladies (and gents), I dare say you might be able to convert the green food phobes in your life with this one. The salty flavour of the olives matches perfectly with the fresh sweetness of the oranges.

Ingredients

3 small oranges, peel and rind removed and sliced into segments
1/4 cup pitted marinated Kalamata olives, sliced into quarters
1 cup packed spinach leaves, de-stemmed,washed, dried and torn into bite-size pieces
1/8 cup red onion, thinly sliced
1 tbsp olive oil
1 tbsp balsamic vinegar
Freshly ground pepper, to taste

Directions

Combine the first four ingredients in a medium-sized mixing bowl. Drizzle with olive oil and balsamic vinegar, and season to taste with black pepper. Gently toss salad to cover with oil and vinegar. Serve immediately.

Makes 2 dinner-sized side salads.
